The Bikini Cocktail
Makes enough for 10 people
To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Cocktail (produces 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Method
Making the Cordial: Combine every components in a pot, heat until it reaches a gentle boil, stirring to dissolve. Next, turn off the burner and leave to reach room temperature entirely. Transfer to a clean bottle, close it and refrigerate it chilled, where it will keep for up to a month.
Preparing the Cocktail Base: Mix all the liquids into a sizeable container, let it rest for 60 minutes, then filter it best through muslin, so it's perfectly clear.
For serving: Pour 85ml of the cocktail base into your stirring glass filled with ice, gently stirring carefully for one minute to cool it down. Strain into a cold coupe glass or equivalent, decorate with a few cranberries and complete it with a quick spritz of mandarin oil over the top.
